HAM & CHEESE CREPES

Here in France, cuisine country, we use to eat sweetened crepes and it's probably the way you know them but it's very usual to eat salted ones as well. Then, I'd like to share with you a crepe recipe as a main course for your lunch or diner.

Then, here's the recipe for 2 people (4 crepes) :
For the crepe batter :
- 60 gr all purpose flour
- 1 egg
- 150 ml milk
- 1 tablespoon oil
- salt
For the ham & cheese bechamel :
- 1 tablespoon butter or margarine
- 1 big tablespoon flour
- 1 cup of milk
- ground pepper & salt
- 3 slices of ham
- 1 handfull grated cheese .

Ok guys, mix all the ingredients for the crepe batter and make the 4 crepes. Reserve.
To make the bechamel, melt the butter with the flour over a gentle heat and then add the milk progressively and stir until smooth and thick. Now add the grated cheese, stir until homogeneous and add the ham. Don't forget to add the salt and pepper (add also nutmeg if you like it). Now, put 2 tablespoons of this mixture in each crepe and fold them. At last, put the crepes in a ovenproof dish, brush them with butter and sprinkle with grated cheese (optional) and then put the dish in the oven for about 15 minutes (or in a frying pan with a bit of butter).

By the way I made actually a special bechamel, I put half of milk and half of heavy cream. I think it's better but higher in calories.
Hope you liked this recipe...

can you ship it here? I only use 1 or 2 time units to cook ;)
